Ingredients
2 dozen médium sardines
1 green pepper
1 onion
2 cloves garlic
Parsley Breadcrumbs
Olive oil
Vinegar
Salt
Preparation
First clean the sardines by inserting your finger in the belly and removing the innards. Open the sardine, and remove the head by separating the central spine from the flesh.
The fish should remain completely open like a fillet. Wash in cold water and dry with a cloth. Season with salt.
Chop the onion and pepper into strips, slice the garlic and fry with a little olive oil. Once cooked, use the vegetable to line the bottom of an oven proof dish and place the fillets on top, with the skin face up.
Sprinkle with chopped parsley and breadcrumbs, and drizzle with a little olive oil and vinegar.
Place in the oven at a high heat for five minutes until cooked.
Serve hot.
